The Biggest Loser

Speaking of fresh new starts… I love The Biggest Loser! I haven’t missed an episode since day 1 of the first season! I love the thought of all of those people who are given  second chance at life. I love the thought of all of us watching, and internalizing even the smallest tip which can help us become healthier. I love the fact that these people, who come on the show thinking they are nothing, leave being an inspiration to so many thousands of people.

This year, a group of friends I have never met in person and I will be having our own “biggest loser” Between now and March 31, whoever loses the highest percentage of weight will win! We are all putting in $20 – whoever loses the most gets the whole pot – I think it’s up to $200. That money is MINE! I am so motivated! Well, anyways, we are all signed up on this site called www.myfitnesspal.com This place is awesome! I log in my exercise, and everything I eat, I tell it how much I want to lose, and it calculates my calories I need to eat and burn. I am rocking the calorie intake! Anyways, I have a great crock pot chicken recipe to share with you all (not the crock pot rotissere, although that was good, too).  But I have no pictures at all, whatsoever! So, I will come back tomorrow with some pictures and the recipe. IT was good! I will give you the rotissere recipe, too.

All of this to say – I had been planning on doing a knit marathon today, but chose to clean and to recoup my VERY tired and sore muscles. My mama came over and cleaned out my fridge for me! You have gotta love a mama that will come over and clean her 40-year-old daughters fridge!

OK, I am exhausted, I m off to bed early to read and rest so that tomorrow I can work out some more and kick these young kids’ butts at losing weight (did I mention that the majority were in their upper 20′s/lower 30′s? ya. I told them I should get a percent handicap due to my advanced age. lol… they didn’t think so!

Meal Plan Monday… It’s a crock pot world

Well, my friends, we have made it to another Monday. Which means *sigh* another week of trying to come up with new and different meals to feed our families.

This week I am going with simple and crock pot.

Monday: Crock Pot Mexican chicken… seriously, super simple! 4 frozen chicken breasts, a bag of frozen corn, a jar of salsa, packet of taco seasoning, can of drained black beans and a chopped onion. That’s it. In a crock pot. 4 hours. period. shred the chicken, and return to the pot. Add 8 oz of cream cheese, stir in and turn off the crock pot. LEt sit for 10 minutes. I Serve it on tortillas, or over rice. Or eat it out of the pot, or out of the fridge when no one is looking… It is GOOD! It will change your life. seriously.

Tuesday: Fabulous marinated and grilled chicken from the cookbook “In the kitchen with Rosie” with a greens salad and dressing

Wednesday:Impact night, and pizza

Thursday: Chicken and Veggie Curry -  a new recipe I am trying out before I start on my cleanse on June 11.

Friday: Home made broccoli parmesan sop from the Peter Christian’s Recipes Book

Saturday: Left overs

 

I have just dug around in my recipe book shelf, and found a cookbook that I simply HADDDDD to buy 3 years ago *Cool Kitchen by Lauren Chattman* and have never once, not ONCE, used. I am going to try 2 recipes from it next week.

Meal Planning Monday

Wow, was last week crazy!!! I am so thankful for my kids, but I have to admit, I was secretly happy to enjoy my quiet house today. I love routine, and today it was nice to just settle back in to my routine.

Tomorrow I will post up some fabulous pictures of our vacation week. For now??? I will share our week’s menu. This week we are cooking a la Pioneer Woman. She speaks to my gastric soul.

Monday: The Marlboro Man Sandwich

Tuesday: Steaks on the grill with grilled veggies

Wednesday: Impact night Pizza

Thursday: Cajun Chicken Pasta

Friday: Chicken Parmesan

Saturday: sandwiches or grilled something (we will be doing yard cleanup all day)

Sweaters, Sweet Potatoes and one VERY Creative Daughter…

I was a very lucky girl, and got to knit the day away yesterday. I was able to finish the body of my Iced Cardigan.

 My plan was to wake up early, and knit at least one sleeve today. No dice. Life got in the way. Ok, a binder full of coupons, and grocery shopping at Shaws, followed by bringing Aidan to the Drs. But my plan for tonight is to pick up and knit a good part of a sleeve. My goal is still to get this sweater done so I can wear it on Saturday or Sunday.

Speaking of sweet potatoes… someone DID say sweet potatoes, right? No? Just me? FINE! I love sweet potatoes. Tonight’s dinner is in the oven. Featuring none other than….. (drumroll please….) sweet potatoes! It was so simple – I diced up some sweet potatoes, an onion, and drizzled on olive oil and added thyme. Then I placed seasoned chicken thighs and drumsticks on top, and drizzled maple syrup on top. In about an hour I will have sweet yummies on my plate.

While I was making dinner, my daughter tells me that she is going to MAKE her best friends birthday present. I said “go for it!”… a minute later she comes running upstairs with this fabulous flannel fabric, and my scissors and starts cutting…

 

She is definitely her mother’s daughter. This is going to be a purse. These are the add-on’s for the inside – a couple of pockets, and pencil holder thingy. She just started cutting things and placing them here and there. I will post more pics tomorrow while she sews it together. I am so happy that she creates without second guessing, or giving herself limitations.  The possibilities for her creative future are so wide open!

I am off to pick up stitches and knit sleeves. This yarn has been waiting patiently for me for 6 years, and I can’t wait to wear it.

Did I mention I have SWEET POTATOES cooking in the oven???
