They just happened, I mean, I was sitting knitting, and then all of a sudden the butter just started creaming itself! What’s a girl to do???

Well, at least I got some good knitting progress as well. I have finished the cuff and 8 sleeve increases on the first sleeve.

I have to say, I love this yarn. I was afraid I wouldn’t because it is not the usual yarn. It is Wool-Ease by Lions Brand. The only down side is that it rolls like a son of a gun. It is a little frustrating when trying to measure, or take pictures. (Speaking of which, my youngest says to me while I am photographing the chicken “Mom, why are you always taking pictures of our food?” Apparently she doesn’t read my blog.)

I am off, and I am probably done knitting for the night. I think I may spend some time crocheting – ya, I just said that! I finally learned! I can’t wait to show you guys the progress I have made on my basket!

Knit Marathon Update: Making soup is not knitting?

I have been a completely ADD knitter so far. But, I have accomplished quite a bit. As you saw earlier, I finished my 4 scarves which will be mailed out tomorrow to my sister for her family.

Sunday is church day for us, but one of my kids was sick, so she was brought to the clinic, and I stayed here with the other 2. While I knitted and attended church via the internet, the kids measured the snow for me and made a very cool fort

Pinterest Pick of the Week

A few months back I got sucked into the world of Pinterest. Has this happened to you? Well, I have now pinned a few hundred items. So many things I love! So many ideas! But I have never done any of them. I have decided that I am going to take one pin from my boards each week and either make or do them (or, if they are bigger projects, get it started).

For my first project I chose to make one of the billion pins I have pinned to my Recipes Board.

This beauty is called The No Peek Beef Tips, and it comes from Tina over at Mommy’s Kitchen. And it fits in nicely with my No-Cash Challenge for February. I had all of my ingredients in either my pantry or my freezer, so I didn’t have to buy anything from the store.  As you can see in the picture below, I had almost 5 pounds of beef chunks that I thawed out. I guess we will be having more beef this week at some point, or maybe I will make something up and toss it in the freezer for a quick heat meal later on when I am in a pinch for time. I’ll let you know what it becomes.

  • 2 pounds of Stew Beef
  • 1 package Lipton Onion Soup Mix
  • 1 package Brown Gravy Mix
  • 1 can Cream of Mushroom Soup
  • 1 cup of water

*Here’s a tip – when you buy those pre-cut packages of stew beef, resist the urge to just pop ‘am all in just as they are from the package. I usually cut most of the pieces into fourths, some just have to be cut in half. The more uniformly you cut your beef chunks, the better they will all cook. By making them smaller, it stretches them further.*

OK – now that you have cut everything up into uniformly sized chunks and placed in a single layer in an 9×13 baking dish, sprinkle the onion soup mix package over the top evenly. In a bowl, mix together the brown gravy mix, the cream of mushroom soup and the water. I had a hard time making everything combine into a smooth blend, so I switched to a whisk – perfection. Once everything is blended together, pour over the top of the stew chunks. It will look a little something like this:

At this point, you want to cover it with foil, and place in a 300 degree oven for 3 hours. And remember, it is called “No Peek” for a reason. Just leave it be for the 3 hours. DON’T PEEK!

*** OK, we are 2 hours and 30 minutes in, and I have GOT to tell you, my house smells in-cred-i-ble! I am off to make my mashed potatoes to serve this over. Potatoes were one of the items I bought when I went grocery shopping earlier. ***

After 3 hours (I left mine for close to 4 because my husband got hung-up at work a little late), you take it out of the oven, do a drumroll, and unveil the beauty (be careful of the STEAM!)…

As my husband was pulling into the driveway, I scooped out some homemade mashed potatoes (which I make with butter, cream cheese and half and half – NOT for the faint of heart), and topped it with the No Peek Beef Tips.

Kev walked in and said “I don’t know what that smell is, but… YUM!”.  After we devoured our plates, Kev went back for seconds. I call that a keeper!

From start to finish, the meal took roughly 4 hours. From start time to meat in the oven took 10 minutes, and that included me snapping pictures.

I definitely call this one a Pinterest WIN!

Work In Progress Wednesday

All over the blogoshphere, Bloggers host WIP Weds. Today I am taking a crack at it, but with a slightly different approach.

It is amazing how only 3 days in to this challenge, I am looking at things completely differently. I am finding double and triple purposes for everything. (As a side note, I can’t tell you how many times my van almost pulled into Dunkins for a Pumpkin Spice!)

Last night I made this amazing Chicken noodle soup. It was from the Cooking Light Magazine.

This morning I was running errands, but when I came home I dove right into making the Strawberry Jam – Super simple – 3 ingredients – Sugar, lemon juice, lemon zest and strawberries.

First, Zest the lemon, and squeeze the juice out of the lemon into a saucepan. Add the sugar and heat over low for 10 minutes. At first it will look like this, and you will wonder where you went wrong:

But then after you keep heating it, and checking it because you are sure it is wrong, then trying to decide if you need to add more lemon juice, all of a sudden it becomes this fabulous liquid…

While this magical transformation was occurring, I was sorting through a huge thing of strawberries – tossing out probably 1/4 of them – and then hulling and chopping them. At that point, I tossed them (very carefully, the sugar is HOT!) into the sauce pan.

After cooking them for 20 minutes, they were at a low boil and looking B-E-A-U-TIFUL!

And Voila – 35 minutes from start to finish!

Now… for all you canning fanatics… I know all about food safety. These are both going right into the fridge and will be consumed this week, one jar here and one jar at moms. Otherwise, I would have boiled the jars, filled them to the top, checked for the proper headspace, finished with a hot bath, yadda yadda yadda.

I think this weekend I am going to try my hand at making homemade Brioche Bread.

And… Just in case you want to keep track of our cashless month – today is day #3, and I have spent NO MONEY! Tomorrow I have to go to Shaws and will pick up some basics, but am hoping to keep it under $30.

It’s a Homemade Tuesday!

Can I just tell you, as soon as you decide you aren’t going to spend any money – THAT? Is when the you know what hits the fan. Promptly after making our decision, my front tooth broke! So off to the dentist to get it fixed. $90 later, I was a whole woman again.

For dinner tonight I was going to make homemade lemon pepper chicken tenders to go on a caesar salad and some left over homemade bread from yesterday. But, I got a message from my hubby telling me how sick he was feeling (him and half the country), and then almost as soon as I got that, my mom called and told me about the fabulous chicken noodle soup she made from the magazine Cooking Light.  Voila – chicken noodle soup it is! I Went through my cupboards and I have all of the ingredients, except for the celery. I am hoping *hint, hint* that my mama will bring me a couple of pieces of her celery. If not, it will be fine without. I got the recipe from mom, and have all of my ingredients out and ready to go:

I think the best part of this challenge we are doing is that I am finally being forced to cook. For those who have been following me here, you know how much I love to cook. The problem has been that it is so much easier to pay a little extra and buy premade. Not this month. This month we are only making what we have in the house. The other thing I have noticed here right at the beginning, is that I am not wanting anything to go to waste.

This past week, I was able to get a large container of strawberries greatly reduced because they were older. We have eaten some and they are incredible. This afternoon I was looking at them thinking how sad it was that they were going to turn bad before we could use them. This afternoon Barefoot Contessa made strawberry jam on her show and a lightbulb went on! I am sooo making some strawberry jam tonight (or tomorrow morning depending on how energetic I feel later. I have all the ingredients! The Barefoot Contessa also made homemade Brioche – I may have to make that, too!

I looked around at my other fruits, and saw that my bananas are a little brown. So tonight I am going to put chopped strawberries and a half banana sliced up into baggies to freeze. I also notice I have some vanilla yogurt that only has a few days left on it – I will flash freeze that in coin sized blops and then add them to the baggies. Instant smoothies for mornings! I guess this challenge is turning into far more than I had initially planned. It is fast becoming a zero waste month.

The Biggest Loser

Speaking of fresh new starts… I love The Biggest Loser! I haven’t missed an episode since day 1 of the first season! I love the thought of all of those people who are given  second chance at life. I love the thought of all of us watching, and internalizing even the smallest tip which can help us become healthier. I love the fact that these people, who come on the show thinking they are nothing, leave being an inspiration to so many thousands of people.

This year, a group of friends I have never met in person and I will be having our own “biggest loser” Between now and March 31, whoever loses the highest percentage of weight will win! We are all putting in $20 – whoever loses the most gets the whole pot – I think it’s up to $200. That money is MINE! I am so motivated! Well, anyways, we are all signed up on this site called www.myfitnesspal.com This place is awesome! I log in my exercise, and everything I eat, I tell it how much I want to lose, and it calculates my calories I need to eat and burn. I am rocking the calorie intake! Anyways, I have a great crock pot chicken recipe to share with you all (not the crock pot rotissere, although that was good, too).  But I have no pictures at all, whatsoever! So, I will come back tomorrow with some pictures and the recipe. IT was good! I will give you the rotissere recipe, too.

All of this to say – I had been planning on doing a knit marathon today, but chose to clean and to recoup my VERY tired and sore muscles. My mama came over and cleaned out my fridge for me! You have gotta love a mama that will come over and clean her 40-year-old daughters fridge!

OK, I am exhausted, I m off to bed early to read and rest so that tomorrow I can work out some more and kick these young kids’ butts at losing weight (did I mention that the majority were in their upper 20′s/lower 30′s? ya. I told them I should get a percent handicap due to my advanced age. lol… they didn’t think so!

Week Two of New Beginnings

Today is the start of a brand new week! Which means time to reflect on last week, and set new goals for this week. I did pretty well last week. I made 2 healthy dinners, and tried out one new lunch recipe for the kids – Pictured below is the healthy version of the kids’ favorite Pizza Lunchable:

I used a Whole Grain Sandwich thin, which splits in half and make 2 full “pizzas”.  A baggy of shredded mozzarella, organic pizza sauce and pepperoni slices. To add a little something extra, I put in a pickle and for dessert, a fiber one granola bar. The kids loved them. And yes, they eat them cold.

Back to last weeks’ goals – I made it to the gym twice. I didn’t get very far sorting my knitting. My hubby was away, as were the kids, and with the empty house, I spent the last 4 days watching shows everyone else hates on Netflix while knitting and puttering around the house. I am really ok with that, as I made it a conscious choice, rather than just not getting to it.

I made great progress on 3 projects. These will be my main projects until they are finished.

1) My hunny’s Nordic-Style Sweater – I finished the last 17″ on the back, and have the front done all the way up to the split for the zipper. I also cast on and worked the ribbing for the sleeves while I was on the bike at the gym this morning.

2) The Un-Fat Sweater: You may remember this beauty from about a year ago. She is called the un-fat sweater because I bought her with Christmas money as a reward for working so hard on my weight loss and getting fit goals. I stopped working on it because I stopped working out. I am back on the fit-train now (as of last week), and so I am working on her again. She is made of the most delicious Malibrigo you have ever felt!

3) The Stellar Socks: Of course, I can’t go without a pair of socks to work on – being that this is the year of the socks for me. Kevin bought me sock yarn for Christmas. HE went to my local yarn shop and picked it out all by himself, with no prompting from me what so ever! I didn’t even ask for yarn! He picked out this perfect sock yarn, that as I knit becomes a perfect sock for wearing with jeans and by brown leather clogs. The man did good!

Alrighty - this week? My goals are:

  • Continue to make better food choices
  • Get to Storms Fitness (my local gym) 3-4 times this week.
  • Locate and pull out all of my yarn and yarn-related items
  • Keep blogging!

Dinner tonight is a Rotiserrie style chicken in the crock pot – It is a brand new recipe I found online. If it comes out yummy, I will share it with you.

Full Freezers… The Final Frontier…

Ok, as promised… Here is the second half of my cooking day… Yesterday’s post was full of someone else’s ideas. Today? Today is all mine, baby!

***I promised my husband I would correct an error – HE washed all the potatoes! lol*****

So, where was I? Oh… ya, right… The soups! Oh, boy, the soups. I made 3 different soups – I tripled each of the recipes. While the soups were cooking, I made the spaghetti sauce.

The first soup is my favorite, it is from the Peter Christians Recipe book   -

Broccoli Parmesan Soup.

Heat 2T butter in a soup pot and saute 1 small onion diced

Add 2 C chicken broth and 1 bunch of chopped broccoli, cook until broccoli is just tender.

In a small bowl mix: 3T flour and 1/4 C cold water, Add the flour mixture to the sop, stirring until thickened.

Season with 2T sherry, 1/4 C Parmesan cheese, 2t basil, 2 t onion powder, 1/4 t nutmeg.

Simmer for 20 minutes, adding 1C milk and 1C light cream.

You can serve it like this, or… I like to use one of those magic wands and smoosh up the soup – it freezes better that way. This recipe as is makes about 6 servings. If you multiply the recipe, mind the amount of chopped onion you add – I like to only double the onion if I triple the recipe.

From there I made my new favorite – Dutch chicken and corn chowder – I will feature this recipe later next week. And I finished my soup frenzy with Dill Potato Soup.

Now on to my easy peasy pasta sauce – I am a RAGU addict. I mean, like, it’s ragu or it’s nothing at all. Because of that, all my daughter will eat is Ragu as well. So, imagine my dilemma when a while back we were in huge financial struggles and I couldn’t even justify spending money on Ragu - we tried generic, it went over like a fart in a wet suite. It was then that I came up with this…

Easy Peasy Pasta Sauce

#10 can of Tomato Sauce

1 cup of Spicy Spaghetti seasoning

minced garlic

chopped onions

1/3 cup sugar

OK – Here’s the deal – pour a little EVOO (extra virgin olive oil) in the bottom of the pan – saute your onion and garlic. Pour in the tomato sauce and spicy spaghetti seasoning. Taste it… It was a little too salty for me, so I added the sugar, and it took out that salty taste. I have been informed by my picky taste testers that it tasted EXACTLY like RAGU! Bonus? The total for all of this was around $5! So you know what I am talking about – here is the spicy seasoning:

What else??? oh ya! The calzones!!!

OK, so you know that pizza dough we made? take it out…

now, roll out palm sized portions of pizza dough – add about 1-2 T of your shredded chicken (either the bbq or the buffalo). fold over the top of the dough and use a fork to seal the edge. Bake for 8 minutes and then take out and cool. This will NOT be cooked all the way through. Once cooled, put them in freezer bags. When taken out to be cooked, either thaw in the fridge, or microwave for 4 minutes. Then bake in a 350 oven for 8-10 minutes.

Once all of this is done? All that’s left is the clean up! (Thanks mom, for coming and helping me)

One of the benefits? The day after I finished all of this, a good friend called and said she needed to be in bed, resting for a couple of days. I was able to just grab a couple zip bags from the freezer and head over to her house. The end of last week I wasnt feeling well, and I was able to send the kids down to the freezer to pick out just what they wanted and because it was all labeled, they were able to do it themselves.

A week and a half later, this is what remains in my freezer -

What isn’t in this picture are the bags of soup that wer upstairs in that freezer. My goal had been 40 meals – I ended up with probably over 50.

Can you do this? Certainly! Do you have to do it on this scale? No.

You could start by making two of what you ar having for dinner tonight, and freezing one of them. Poaching chicken breasts for something? LEt it do double duty, save a TON of money – strain the liquid and freeze it to use when making recipes that call for stock or broth!

40+ Dinners in an afternoon? Hack ya…

… But then I had to clean it up! lol

What am I talking about? Well, a couple of months back I was reading some blogs (you know how that can happen…) and clicked links from blog to blog, and ended up at this one blog. The author (and I really wish I could give credit, but I can’t find it again!) had posted a blog about how she prepped for her summer by filling her freezer with fabulous yummies so she could just go out and about enjoying summer with her kids without stressing about what to put on the table that night.

So I said to myself “Self? This is an AWESOME idea!” and I loved her suggestions for foods. I used many of them, and then added my own as well. She did hers (and again, I really wish I could give her a credit her and link to her blog. If I find it, I will write it up, promise!) in only 4 hours. Now, I am a good cook, but I thought there was no way in hell I could do that all in 4 hours. But decided to give it a whirl.

Those who know me and have been reading my blog know that I LOVE me some good bargains, so off Kevin and I went in search of good meat deals… On Memorial Day… The mother of all grilling days… And we found some!

Without further ado – here is what I did…

First off, prepping is KEY! If you need chopped onions, chop ALL your onions at the same time. Browned meat in several dishes? Do it all at once.

Make sure you have pots big enough – I was doing recipes times 3 and 4. I found myself having to move into bigger pots halfway through to accommodate all the ingredients – which made for more washing in between, which equals added time and effort.

Anyways – I decided to not make ENTIRE meals, but to make “meal starters” – things that can be added to little extras to make a finished product.

To start, I prepped by chopping up onions, green peppers and celery.

Then, I set out to make all of my chicken. I had 24 split boneless skinless chicken breasts to simmer. I split that into 2 batches, covered with water, and added a rough chopped carrot, onion and celery, plus some whole black pepper corns and brought to a simmer. I simmered (DO NOT BOIL! This will make your chicken so tough! It will be ruined) for between 10 – 15 minutes. Be sure to check it frequently.

While the chicken was simmering, I took out my big frying pan, added 2 pounds of hamburger, a handful of each of my chopped veggies, and set that to browning.

Once browned, cool and store in quart sized zipper FREEZER bags. Trust me on this – after going through all of this work, use the freezer bags – splurge of the best brand – anything less will leave you sad and with freezer burned food stuffs later on! I made 2 cup portions. This can be pulled out later and made into sloppy joes, it can be added to plain spaghetti sauce, nachos, whatever!

Rinse, and repeat! This time, to the 2 pounds of ground beef  and the chopped veggies (after browning) I added 2 cups of salsa, a can of diced green chilis, 2 Tbls of Chili powder, 2 tsp onion powder, 2 cups of water, cumin, brown sugar, and garlic. (this was a recipe from the same site that I was inspired by) – she originally called it taco mix, but we loved it as a beanless chili!!!! so flippin good!

Oh – snap! I forgot about all of the potatoes! After I put the chicken on the stove top, and while the first batch of meat was browning, I washed a TON of potatoes! and got them into a 350 degree oven to bake for an hour!

These will become some fabulous twice baked potatoes. Once they are done baking, take them out of the oven and set aside to cool until you can handle them… Then, cut them in half and scoop out the centers into a mixing bowl. Add melted butter, half and half, milk, cream cheese, chives, lots of salt and pepper, and mix it all together! I then put this mixture into a large piping bag, cut off the end and piped it back into the skins. After wrapping each half separately in plastic wrap, I put them into Gallon freezer bags.

OK… back to the chicken… Once it was cooked through, I pulled the chicken out of the water, and set aside to cool for about 10 minutes. While the chicken was cooling, I strained the liquid and cooled that. Once it was cooled enough, I separated it into 2 and 4 cup servings – these are the usual amounts of stock I use for different recipes. Then, I repeated the process with the remaining chicken breasts.

Once the chicken was cooled enough to handle, I brought out my trusty Kitchenaid, plopped in 4 breasts, covered the mixer with a cloth so I wouldn’t end up wearing shredded chicken and blended it for about 10 seconds – and there you have it – shredded chicken!

I shredded quite a bit of the chicken, cubing only about 1/4 of all I had. I froze the cubed chicken as is – in 2 cup portions. I also froze several portions of the shredded chicken plain. Then? I did something awesome!

I made some simple Buffalo sauce (a jar of Franks hot sauce simmered with 2 sticks of butter)

After making the sauce, I added it to some of the shredded chicken, which I then split into 2 cup portions to be eaten on buns, added to pizza, made into buffalo chicken salad… and then I held some aside to make in to Calzones.

I then repeated the process with more shredded chicken and BBQ sauce.

(I have to thank the blogger who started this for me, as this is almost exactly what she did and blogged about. This is totally NOT an original idea!)

After this, I was exhausted, it was diner time, and I cleaned up so I could start with the soup, pulled pork and pasta sauce.

Ok, so… I have read about this… I have seen pictures…. but I never dreamed it could be so true… so miraculous!

I took mu cooked chicken breasts out of the crock pot,  put them in my blender, switched it on low/med, and it shredded my breasts in seconds!!!!!!! I have changed your lives, people…
